Fundamental Hospitality is set to launch KIGO, an immersive Japanese dining concept, at the Four Seasons Hotel Dubai International Financial Centre this September. The new restaurant will offer elevated kaiseki and omakase experiences that celebrate seasonality, craftsmanship, and the Japanese philosophy of mono no aware — the appreciation of life’s impermanence.
Guided by Chef Izu Ani, Head Chef Akinori “Aki” Tanigawa, and Sushi Head Chef Daihachiro Ebata, KIGO will feature a 44-seat dining room anchored by a sushi counter made from rare Aji stone, alongside a private dining space for bespoke experiences. The name “KIGO” (季語) originates from haiku poetry, representing seasonal markers such as cherry blossoms, fireflies, autumn embers, and winter snow.
The menu will showcase seasonal ingredients at their peak, prepared with precision and purity, complemented by rare sake selections — including the exclusive Shigemasu 18 Junmai Daiginjo — as well as seasonal cocktails and curated Japanese teas. Guests can opt for a chef-led omakase at the counter or a refined kaiseki set menu.

KIGO will open in September 2025 at Four Seasons Hotel DIFC, inviting guests to savour a multi-sensory journey that is both rooted in Japanese tradition and distinctly unique to Dubai.
